Enchilada Verde Two green enchiladas stuffed with chicken, topped with two eggs, stuffed with all three of Maria’s cheeses & covered with verde sauce.	Beef Chicana Omelette Tender beef sautéed with onions bell peppers, tomatoes, and cheese.
Machaca Tender beef sautéed with green and red bell peppers, green onion, and scrambled eggs.	Ortega Chilies and Cheese Omelette Ortega chiles and Maria’s three cheeses.
Huevos ala Mexicana Scrambled eggs with diced jalapeños, onions, and tomatoes.	Veggie Omelette All fresh broccoli, peppers onions, mushrooms and cheese, topped with guacamole & sour cream.
Fried Tamale Ask your server for choice of the day.  Covered in fresh red sauce or green sauce & cheese.	Meat and Cheese Omelette Choice of Ham, Sausage, Chorizo, Bacon or Longaniza and Maria’s three cheeses.
Chorizo Scrambled with eggs.	Denver Omelette Ham, bell pepper, onions, and cheese.
Huevos Santa Fe Two eggs served on corn tortillas, topped with black beans, and ranchero or verde sauce.  With fresh salsa and Mexican cheese.	Shrimp or Crab Omelette Shrimp or crab omelette, grilled with bell peppers and onions.  Topped with Mexican cheese and sour cream.
